3-4 old bananas
1/2 cup canola oil
2 eggs
1 cup brown sugar
1 cup wholemeal flour
1/2 cup coconut flour (or grind 1/2 cup unsweetened coconut in a food processor until)
2 tblspns date molasses or golden syrup
1 tspn cinnamon
1/2 cup currants
1/2 cup walnut pieces (optional)
1 tblspn baking powder
2-4 tblspns carrot juice or orange juice

time: 10 minutes active, 25 minutes baking

you will need:

cake pan

food processor

trash day banana bread

There were a few suspect bananas waving at me from the fruit bowl this week. It was trash day. I figured they could either go into the trash can or the cake pan.

The cake pan won.

I tossed everything into the food processor.

Then it went straight into the oven.

I cooked it in a square pan, so I simply sliced it down the centre, sandwiched it with some cream cheese frosting and dusted it with icing sugar.

Sometime's it's mighty tasty getting trashy!

preheat oven to 375f

peel the bananas and add them to the bowl of the food processor

add everything except the currants and walnuts and pulse to combine.

add the currants and walnuts and stir through

pour into a square cake pan and bake about 25-30 minutes
