8oz / 225g rhubarb

8oz / 225g strawberries

140z / 400g superfine / castor sugar

1 lemon (meyer,if possible)

2 cinnamon sticks

2 star anise

time: active 15 minutes, total 45 minutes

you will need:

  • a medium  / large saucepan

 

spiced strawberry and rhubarb sauce

prepare: fruit by cutting rhubarb into 1inch lengths (discard any green bits in the stalks) and by hulling the strawberries. I leave the strawberries intact, but you can slice them in halves if you like

combine: sugar, fruit, lemon (sliced into halves), cinnamon sticks and star anise into pot and cook very slowly under a low heat. the sugar will melt, the fruit will soften, the spices will fill the air and in around 30 minutes, the sauce willhave boiled down to a rich, dark syrupy confection. remove spices, lemon halves and any lemon pips

store in an air tight container in the fridge

serve with ice cream and lady fingers...add some melted chocolate and make somebody's day!
