2 oranges

2 cups  almond meal*

1 1/4 cups superfine / castor sugar

1 teaspoon baking powder

6 eggs

few drops vanilla essence

1 tablespoon cointreau or grand marnier

*if your oranges are large, you might add an extra 1/4 cup of almond meal to balance the moisture content

you will need:

  •  medium sized saucepan for oranges
  • 9 inch spring form pan
  • food processor

 

 

 

 

flourless orange torte

found yourself dating a starving starlet with a sweet tooth? trying to cut out some carbs and fats? here's a sexy, very adult dessert that is virtually guilt-free

there is no flour, so that cuts out half  of the processed carbs, and there is no butter or oil...the almond meal replaces both the flour and butter content

and you get the total flavour of the orange; flesh and rind. this torte is moist, delicious and perfect with an after dinner coffee

cover: oranges with water in a medium saucepan. bring to the boil and cook for 30 minutes, then drain and set aside to cool a little

pre heat: oven to 375f / 190c

cut: oranges in half and remove any seeds, place flesh and any juice into a food processor and blend

add: almond meal, baking powder, lightly beaten eggs, sugar, vanilla and cointreau and blend to combine

bake: in a buttered and floured 9 inch springform pan for around 40-45 minutes. cake is cooked when it feels firm to the touch

serve: dusted in confectioner's / icing sugar and with some fresh whipped cream...I also drizzle some good quality marmalade on top ('bonne maman' is my favourite)
