1 granny smith apple

2 sticks /8oz butter

1 cup dark brown sugar

1 cup superfine/castor sugar

1 1/2 cups self raising flour

2 eggs



pinch cinnamon

total time: 40 minutes / active time 10 mins

you will need:

  • medium saucepan
  • 9 inch cake pan or 6 small cake pans / ramekins

serve with:

apple and toffee cake flamed with calvados 

adam and eve would've left eden a whole lot sooner if they'd tasted this instead of the humble apple!

you can have this whipped up in no time...make the batter a couple of hours ahead and pop it into the oven when the pork comes out

serve it wth cream poured around it and douse it with a good amount of calvados. light a match and get ready to moan

soften: 4oz of butter, beat 1 cup of firmly packed brown sugar and a pinch of cinnamon into it. spread this mix on the bottom of a  buttered 9 inch cake pan (or six individual ramekins)

peel: a granny smith apple, cut into quarters, remove the core then cut each quarter into 4-6 wedges. lay these on top of the toffee paste in the cake pan

melt: 4oz butter, stir in 1 cup superfine/castor sugar, 2 eggs, 1 1/2 cups slef raising flour and 1 dash of cream. beat to a batter consistency

pour: batter over toffee and apples

bake: in a pre heated (400f / 180c) oven for 30 minutes. cake is done when it is frim in the centre and springs to the touch

invert: cake carefully as hot toffee sauce is about to run down the sides

pour: calvados on top and set alight
