parsnips roasted in parchment These were a fluffy, lovely revelation. A bunch of baby parsnips fresh from the farmers market, a knob of butter, a sprinkle of brown sugar and a pinch of salt and nutmeg. All wrapped up in a parcel of baking parchment and roasted into a buttery, crispy yet creamy sensation.
heat the oven
to 400f
peel and trim
the parsnips tear a length of baking parchment about 18 inches / 45 cm long huddle the parsnips into the middle of the parchment dollop the butter and sprinkle the salt and sugar over them grate some fresh nutmeg atop gather the two ends of the parchment up, fold / roll them together as you would a paper bag fold over the two sides to seal the parcel and staple each side to fasten bake on a baking sheet for about 45-60 mins until the parsnips feel tender serve in the parchment at the table; tear and let the steamy little devils reveal themselves to everyone at your table
tip: if serving
for a large sit down group (Thanksgiving or Christmas
dinner etc...) make several small parcels and place
them down on the table at intervals so that each
parcels serves around 3-4 people. if you can't find
baby parsnips, them halve or quarter regular sized
ones.
