Saucy flaming yams! So easy. So tasty and such a scene stealer! Simply line a baking tray with foil, place the yams in the tray and drizzle them with olive oil. Roll them around until they are shiny all over. Place tray on a rack under the turkey and let them bake away for about 1 hour (@350-375f) When you take the turkey out of the oven, slice the yams lengthways and sqeeze the sides so that they open up. Mix 1/3 cup dark brown sugar with 1 tspn nutmeg and 2 tspns cinnamon. Sprinkle this over the yams and put a dab of butter into the slit on each. Pop back in the oven to let the butter melt and the sugar will dissolve a little. Serve on a platter with a dollop of creme fraiche on each yam. Heat a little bourbon in the microwave for a few seconds, pour over the dish and (carefully) set it alight. Wait until everyone has gone 'Oh!' and 'Aah!!' and them blow them out so that the skins don't scorch.
