| bobi's thai relish
beware: this one is amazing, but not for the faint hearted. my friend, bobi gave me this recipe. it is basically flavoured garlic. just hope that you're not courting a vampire! peel: the cloves in a whole head of garlic (that's 10-12). boil them in shallow water for about 5 minutes fry: 2 tablespoons of dried shrimp in 2 tablespoons of olive oil for 2-3 minutes. do not burn the shrimp, they should just brown slightly. keep the oil blend: garlic, prawns and oil in a blender or (more laboriously) in a mortar and pestle. add 1-2 seeded, chopped chilies; juice 1 lime; 1 tablespoon shaved palm sugar (or brown sugar) and pulse a couple of seconds to blend serve: with blanched snap peas the tasty side-kick: fry up some more dried shrimp with salted peanuts and some chili flakes. serve hot build a meal: use the leftovers as a salad dressing. soak some rice/vermicelli noodles, add some grilled chicken, leftover peas and add a little more lime juice and oil to the relish | ||||
