grilled chicken salad with creamy basil dressing toss: chicken tenders in a ziploc bag with 2 tablespoons olive oil, 1 crushed clove garlic, pinch salt, pepper and chili flakes drizzle: 1 tablepoon of olive oil over red pepper strips grill: chicken tenders and place pepper strips on a cooler part of the grill. place prosciutto in a stack next to the chicken. grill everything for about 4 minutes each side combine: romaine lettuce, sliced into 1 inch strips; cucumber, tomatoes cut into wedges, sugarsnap or snow peas, basil leaves, basque cheese (substitute with your favourite), sliced avocado (optional). place in a large, open salad bowl combine: 1/3 cup of light mayonnaise, dijon mustard, pesto, white wine vinegar, splash of olive oil, pinch of brown sugar, cracked black pepper to taste. mix well. taste the dressing; add more pesto, mustard or vinegar for a sharper flavor or more oil or mayonnaise for a smoother flavor chop: the prosciutto into strips. the outside of the stack should be crisp, the inside smoky and tender. add the prosciutto, red peppers and the grilled chicken tenders to the salad, top with the dressing and serve with grilled flatbread or a warm ciabatta loaf tip: don't eat meat? try grilled salmon instead! feeling lazy? see whether your supermarket has a ready made salad dressing.
