2-4 lamb cutlets per person

olive oil

4 inch sprig fresh rosemary

couple sprigs fresh parsley

couple sprigs fresh thyme

4 fresh basil leaves

2 bay leaves

4 fresh sage leaves

olive oil

lavender salt

time: 15 minutes active, 2+ hours for marinading

you will need:

  • glass dish to marinade lamb in
  • grill

 

lavender grilled lamb chops

these chops are so full of flavour, the sweetness of the lamb is sensational with the fragrant saltiness of the seasoning

this is a perfect excuse to start a herb garden so that you always have these flavours at your disposal

mix: all herbs and pour 1/4 cup olive oil over them

marinate: lamb chops in the herbed oil for at least 2 hours

grill: for 2-3 minutes per side

serve: with lavender salt on the side to be sprinkled onto the seared chops

*if you cannot find lavender salt, buy some lavender petals (sold with herbs at supermarkets) and mix a couple of teaspoons in with equal quantities of sea salt 

**you can substitues dried herbs for all of the ines used here, just halve the quantities
