active time:

chicken stuffing: 15-20 mins

preparing chicken: 10 mins (1 1/2 hrs cooking)

mix salad: 10 mins

chocolate custard: 20mins

chocolate mousse: 20 mins

assembling trifle: 10 mins

set dining table:5 minutes

around 2 hours

 time line

1-3 days ahead:

  • shop for everything at the supermarket

day before:

  • make the chocolate custard, mousse and assemble trifle

2 hours before:

  •  start cooking the chicken

1 hour before:

  • set table
  • mix salad dressing
  • make salad
  • pour yourself a glass of something fine

10 minutes before:

  • pour yourself another glass of something fine
  • put her favourite cd on
  • check each room for incriminating evidence

 

 

not your mother's roast chicken

I still identify the smell of roast chicken with my mother's kitchen

it's just one of those things

but I rarely cook a chicken the way that my mother did: bread and onion stuffing, roast potatoes and pumpkin, boiled beans or peas, bread sauce and gravy

it always seemed like such a production

in fact, roasting a chicken has to be one of the simplest ways to feed a group

put it in the oven, check it twice and bring it to the table to serve. 1 1/2 hours

this is a one bowl dinner that channels zuni restaurant's famous chicken and bread salad, but this is even simpler

the trifle is easy enough, but you can throw together a store bought version in 10 minutes
